Butterscotch Pie

Any pie featuring this homemade confectionery joy—made up of brown sugar, cream, vanilla, and butter—will linger on the tongue well after the dishes are put away and the lights turned low. Sweet, sweet dreams.

FOR THE CRUST

One 9-inch baked pastry pie crust

INGREDIENTS

2 tablespoons butter

1 cup firmly packed brown sugar

½ cup hot water

2 large egg yolks

2 tablespoons all-purpose flour

2 cups evaporated milk

1 teaspoon salt

3 tablespoons cornstarch

1 teaspoon vanilla extract

meringue (optional)

whipped cream (optional)

TO PREPARE

Brown butter in a saucepan over low heat. Add brown sugar and hot water, being careful as it may spatter. In a separate bowl, blend egg yolks, flour, evaporated milk, salt, and cornstarch with whisk or in a blender. Add milk mixture slowly and carefully to hot sugar mixture. Cook over medium heat until thick, stirring constantly. Remove from heat; add vanilla. Pour into crust and refrigerate until ready to serve.

FOR THE GARNISH

Top with meringue or whipped cream, if desired.
